With nearly 40 million Americans claiming Irish heritage it’s no surprise that we love St. Patrick’s Day! But did you know that many of the parades, river-dying, and celebration that many of us associate with March 17th have distinctly American roots spurred on by numerous generations of immigrants seeking to stay close to their Irish roots? Dublin didn’t hold it’s own St. Patrick’s Day Festival until 1996, and until the 1960’s most pubs in Ireland were closed on St. Patrick’s day since it falls during Lent.
Whether you’re of Irish heritage or not, grab your green shirt (it makes you invisible to mischievous faeries) and keep the celebrations going with one of our favorite St. Patrick’s Day meals! And definitely don’t forget the Chocolate Stout Cupcakes to finish if off!

A very quick and easy dinner the whole family will enjoy!
4. Muffin Tin Beef Pot Pie adapted from Real Food by Dad Blog
These individually sized pot pies are a snap to make. Change these up by substituting any root vegetables for the potatoes and/or carrots and diced broccoli or kale for the frozen peas.
