I don’t know about you, but sometimes during spring and summer I get into project kicks: spring cleaning, fix the leaky faucet, plant the garden, build those shelves I’ve been dreaming about, paint the spare bedroom… The list never seems to end. I usually have a hard time stopping until I’m done (which always takes longer then I think it should), so by the end of the day I’m getting hangry (hungry + angry), which means I need protein and I need it now! These Turkey and Quinoa Meatballs in Lettuce Wraps are perfect! They are super easy and don’t involve hovering over the stove waiting for them to cook. Pop them in the oven, put your feet up and in 20 minutes they’re ready to go. They also freeze extremely well (either raw or pre-cooked) for an even faster dinner down the road. Even if your summer isn’t so busy, these are a great way to satisfy the kind of hungry that comes after any kind of day. In lettuce wraps is definitely my favorite way to serve them in the summer (especially with a little homemade hoisin sauce) but I’ve also thrown them on spaghetti squash with great results.
