Chimichurri is possibly my favorite new sauce ever, I literally want it on everything! Everything. All the time. And Roasted Cauliflower Steak?!?! How am I only just now discovering this? So when I came upon this recipe Roasted Cauliflower Steaks with Chimichurri… nom nom nom, I seriously can’t get enough. Just thinking about it makes me want to stop typing and go make them again, right now. Of all the cool new ways to make cauliflower this is definitely my favorite. Cauliflower steaks are shockingly hearty and while they might not satisfy a voracious carnivore I would encourage everyone else to give them a shot at being the main course. This dish also doubles well as a side (I’m definitely guilty of serving both Flank Steak with Chimichurri and Cauliflower Steaks with Chimichurri together — like I said, I want this sauce on everything). If you have the time make the Chimichurri several hours in advance, it definitely gets better the longer it sits, but it’s still amazing just sitting while the cauliflower roasts. Trust me, this is a recipe you’ll make again and again!
