I spent years shoving my slow-cooker to the back of the shelf as soon as the first signs of summer started to show. Then last summer I was bemoaning to a friend that there needed to be a summer solution for quick dinners like a slow-cooker does in the winter. She looked at me like I had just wished someone would invent sliced bread and proceeded to tell me all the wonderful things you could make in the slow cooker for summer. She admitted, “Ok, maybe you don’t want a hearty bean soup in the summer, but slow cooked meat for bbq, tacos, sandwiches is SO good in the summer, and you don’t have to heat up the whole house by turning on your oven!” That last bit was the kicker for me, I don’t have to turn on the oven… My slow cooker now remains out year round, making delicious dinner while I’m at work. One of the first summer slow cooker recipes I tried, and that has remained a staple ever since, was Slow-Cooker Chipotle Beef Tacos with Cabbage and Radish Slaw. The beef gets cooked to the perfect tenderness for tacos and the fresh crunch of the slaw is the best compliment. Hopefully you never put your slow cooker away to begin with, but if you did, go dust it off and try this recipe! It’ll convince you that slow cookers are for summer too.
